I skipped blogging yesterday, and I sort of feel bad about it. Its only the second time I have missed it, but I just couldn't get my mind into it yesterday. Believe I tried a few times.
Today I am hoping to get some more stuff unpacked from the garage. It just needs to be done. I'm so over the disaster in there. I can make place or room for things in here once I know what I am working with. Some of our stuff has been in boxes for at least two years. We definitely need a shredder, too, in order to get rid of our clutter.
Dinner was so good last night that I do feel I should share:
(I doubled the recipe for us)
Yogurt-Curry Chicken Salad Sandwiches
1/3 c. plain yogurt
2 Tbsp sweetened flaked coconut
1 Tbsp green onion, chopped
1 tsp curry powder
1/4 tsp salt
2 c. cooked chicken, diced
1/4 c. chopped cashews, toasted (I used walnuts)
8 slices of Cinnamon Swirl Raisin Bread
Blend together yogurt, coconut, onion, curry powder and salt. Mix in chicken and cashews. Divide chicken salad among 4 slices of raisin bread and top with the remaining bread. yields 4 sandwiches
SO GOOD! I don't eat chicken salad (or any of "salad") sandwiches typically. But this truly was so yummy!!! That will be a new recipe for us to use a lot more.
Let's see if I can actually accomplish my goal today of unpacking. It'd be nice to think we could be unpacked by the end of the month...but I know I'm dreaming.
